1¾ lb. beef roast

⅓ cup quartered onions

8 cups chopped potatoes

2 cups chopped carrots

½ cup butter, melted

2 teaspoons salt

½ teaspoon garlic powder

dash of pepper
Directions
Mix potatoes, carrots, onions, butter and seasonings.
Spread around roast beef in a 9" × 13" baking pan.
Cover and bake at 350 degrees for 2 hours.
