Slow Cooker Whole Chicken
This slow cooker whole chicken recipe is an easy way to cook a tender, flavorful chicken with very little prep. The onions help keep the chicken moist while it cooks low and slow.
Cook Time: Low 4–6 hours or High 2–3 hours
Internal Temperature: 165°F
Ingredients
- 1 whole chicken (4–6 lbs)
- 2 onions
- 2 tablespoons olive oil
- ½ teaspoon paprika
- 1 teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Peel and slice the onions into large, thick slices. Place the onions in the bottom of the slow cooker.
- Place the whole chicken in the slow cooker, breast side up. Use a basting brush to rub the olive oil over the skin.
- In a small bowl, mix together the paprika, Italian seasoning, garlic powder, salt, and pepper.
- Sprinkle the seasoning mixture over the chicken and spread evenly over the skin.
- Cover and cook on low for 4–6 hours or on high for 2–3 hours.
- Check that the chicken has reached an internal temperature of 165°F. Carefully remove from the slow cooker.
- Let the chicken rest for 5–10 minutes before slicing and serving.
Recipe Notes
For crispy skin, place the cooked chicken on a baking sheet and broil for 4–5 minutes. Watch closely so it does not burn.
