Slow Cooker Whole Chicken

This slow cooker whole chicken recipe is an easy way to cook a tender, flavorful chicken with very little prep. The onions help keep the chicken moist while it cooks low and slow.

Cook Time: Low 4–6 hours or High 2–3 hours
Internal Temperature: 165°F

Ingredients

  • 1 whole chicken (4–6 lbs)
  • 2 onions
  • 2 tablespoons olive oil
  • ½ teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Peel and slice the onions into large, thick slices. Place the onions in the bottom of the slow cooker.
  2. Place the whole chicken in the slow cooker, breast side up. Use a basting brush to rub the olive oil over the skin.
  3. In a small bowl, mix together the paprika, Italian seasoning, garlic powder, salt, and pepper.
  4. Sprinkle the seasoning mixture over the chicken and spread evenly over the skin.
  5. Cover and cook on low for 4–6 hours or on high for 2–3 hours.
  6. Check that the chicken has reached an internal temperature of 165°F. Carefully remove from the slow cooker.
  7. Let the chicken rest for 5–10 minutes before slicing and serving.

Recipe Notes

For crispy skin, place the cooked chicken on a baking sheet and broil for 4–5 minutes. Watch closely so it does not burn.
